- 2 lbs of boneless and skinless chicken thigh
- 1 tsp Cumin
- 4 minced garlic cloves
- 1 tsp dried oregano
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1 tbs of chili powder
- 2 tbs of olive oil
- 1/2 diced onion
- 1 7oz can of chipotle peppers in adobo sauce (remove peppers, but feel free to add the peppers if you want a bit of spice)
Blend everything from items 2-10. Add 3/4 cup of water and blend again
Put chicken in marinade over night
Cook chicken on cast iron pan to sear for 1 minute on both sides. Then put chicken in oven at 400 degrees to cook the inside for 10-15 min depending on thickness of chicken.
